Easy Cupcakes

Today we bake the world's easiest cupcakes! I've been making these since I was about ten and they always rise faithfully into soft, delicious cases of cheer. The only hard bit is trying not to eat all the mixture. So here's what you'll need if you'd like to bake along.

2 Eggs
Caster Sugar
Soft Margarine
Self-Raising Flour

Ready? Let's do this!
Switch your oven to 180C and grab your eggs. It's all about the eggs.

1: Weigh your eggs. If the two eggs weigh 100 grams (4oz) you will need the same weight of each of margarine, sugar and flour.
2. Cream the margarine and sugar together in a bowl until it is light and fluffy.
3. Add the egg mixture with the flour, a little of each at a time.
Mix well.
4. Spoon the mixture into cupcake cases and pop in the oven for 15 minutes.
5. When your cakes have cooled, ice away and tuck in!

My one mate is the head chef at a smart restaurant in Monte Casino and he heard about these great cup cakes i make and i was commissioned to bake them for the owners daughters 21!!!
Was such a pretty sight!!
